1 carton of Avonmore Fresh Dessert Cream
1 punnet of Keelings Irish Strawberries
4 egg whites*
226g of sugar
1 teaspoon Vanilla extract
Method Preheat oven to 140 C. Whisk the whites until firm and beginning to hold peaks. Gradually whisk in the sugar, 1 tablespoon at a time, and vanilla extract, whipping until you have a stiff shiny meringue. Line baking sheet with parchment and blob on a rounded dessertspoon at a time. Leave space around each meringue as they will puff up as they cook. Cook for about an hour until meringue is dry on outside but still feels soft underneath. Turn the oven off and leave in the oven to dry out until completely cold. Break up and mix with sliced strawberries, whipped cream and crumbled Flake for Eton Mess. Meringue Recipe. Makes 8.
* HOW TO SEPARATE EGGS
Crack the egg on the side of a sharp-edged bowl or on a flat surface.
Break open the egg over a clean bowl and begin to tip the yolk from shell to shell, letting the egg white run into the bowl. (Be careful not to break the yolk on the sharp edge of the shell.)
Once all the egg white has dropped into the bowl, carefully tip the yolk into a separate, clean bowl.
