2 big bunches of O Hanlon Herbs fresh Lime Basil (from Wicklow)
100 to 200 ml Sussed Nutrition Wicklow Cold Pressed Extra Virgin Rapeseed Oil2 cloves of garlic
1 handful of pine nuts
1 good handful of freshly grated Parmesan cheese or strong sweet mature Irish cheddar
O Hanlon Herbs Lime Basil lifts the traditional pesto recipe to new heights.
Peel the garlic. Pound to a paste in a pestle and mortar with a pinch of sea salt. Add the O Hanlon Herbs Lime Basil leaves, then bash to a paste. Add the pine nuts to the mixture and bash again. Add in the Parmesan or strong cheddar. Pour in a little oil and stir to combine all ingredients. Only add enough oil to create a thick but smooth consistency.
Alternatively, you can add the ingredients in a food processor one by one and blend until a fine smooth consistency.
