5 Slices McCambridge Wholewheat Bread
20g Avonmore Butter
125g demerara sugar
800ml Avonmore cream
75g caster sugar
1tsp vanilla extract
25ml Hyde Irish Whiskey
Crumble the brown bread by lightly blitzing in a food processor to make a coarse breadcrumb.
Melt the butter in frying pan, add the breadcrumbs and sauté for a minute.
Add the brown sugar and stir until the sugar has caramelised. Keep a close eye on it at this
point to ensure the sugar does not burn.
Place the breadcrumbs on a plate to cool.
Place the caster sugar and cream in a bowl and whisk to form soft peaks.
Fold in the breadcrumbs, whiskey and vanilla extract.
Put in to a container with lid and freeze.
This recipe is equally delicious made without the whiskey and kids love the caramelised
nuttiness of the breadcrumbs.
