‘Coole Swan Christmas Banoffee’ is a wonderful twist on a classic dessert. A little dash of sumptuous Coole Swan turns this into a festive treat. Effortless. Simply assemble the ingredients and serve to a contented Christmas crowd.
3-4 tablespoons Coole Swan
300g East Coast Bakehouse Caramel & Pecan Cookies
75g brown sugar
85g Avonmore butter
1 tin of pre-cooked toffee
500ml Avonmore whipping cream
Sprinkle with crushed Cadbury Flake
Melt 60g / 2½ oz of the butter, crush the biscuits and mix them into a paste. Place the mixture into a pie dish, flatten into a smooth, even layer and place in the fridge to cool.
Take the base from the fridge and pour the toffee over the pie. Slice the bananas and place on the toffee layer in a bowl whip up the cream with the Coole Swan. Once firm, spread a thick layer over the pie and enjoy!
