1 x jar of Genovese Pesto Verde
4 x Large Irish tomatoes
2 x Macroom Buffalo Mozzarella
a handful of rocket salad leaves, washed.
This summer salad could not be easier to make.
Prepare the caprese: wash the tomatoes, cut them in 1cm slices and place them on a plate, cut the mozzarella balls in slices and add them to the tomatoes. Add the rocket salad leaves. Mix all the ingredients, then drizzle with a few teaspoons of pesto. Season with the salt and pepper and serve the salad with slices of toasted bread.
