Ingredients
- 1 Manor Farm chicken breast
- 2 handfuls Rocket Leaves
- 2 tbsp Ballymaloe Cranberry Sauce
- 2 tbsp Ballymaloe Mayo
- 4 slices sourdough bread

Cook the chicken on a grill pan, you can use leftover roast chicken instead if you have some.

Mix the Ballymaloe Cranberry Sauce with Ballymaloe Mayo and spread on both slices of sourdough.

To assemble, top each piece of sourdough with salad leaves, slices of grilled chicken, some cranberry mayo and top with the second piece of bread.
