Margaret’s Cheese and Chorizo Scrambled Eggs

INGREDIENTS

•4 Margarets Free Range Eggs
• Chopped Gubeen Chorizo Sausage
•Chopped Scallions
•Dairymaid Premium Spread
•Grated Irish Cheddar Cheese
•McCambridge BrownBread

 

•In a frying pan, gently fry the chorizo in a little butter over a medium heat

•Crack the eggs into a bowl and beat with some salt and pepper to taste
•When the chorizo has crisped up, add the egg to the pan and gently work together
•Add in the chopped scallions.
•Continue to work all the ingredients together, and when curds start to form, add some grated Irish cheddar, turn off the cooker and use
the heat of the pan to finish off the eggs.
•Take two slices of Irish soda brown bread, divide the eggs in
two and place on the slices.
•Enjoy!
