Macroom Buffalo Cheese is made in Kilnamartyra in West Cork. They are Ireland’s first and remain the only herd of milking water Buffalo. The Farm is owned by Buffalo farmer Johnny and his wife Geraldine. They produce a variety of cheeses including mozzarella, ricotta, greek style salad cheese and halloumi.
In October 2009, Johnny was disappointed with the price he was getting for his cow’s milk. He decided to diversify and to purchase 31 buffalo from Italy. He now has a herd of over 350 animals on his 150-acre farm in Kilnamartyra and on two other company farms nearby. Macroom Buffalo Cheese products was set up in early 2015 and Johnny began making cheeses in a new state of the art production facility on the farm. He has enlisted the help of cheese maker Sean Ferry of the renowned ‘Desmond’ and ‘Gabriel’ cheese. Sean has over 30 years’ experience in making hard cheese and with assistance of Italian cheese makers he has now diversified into making soft cheeses such as Mozzarella.
The cheeses are made from fresh Buffalo milk produced on the farm which is turned into cheese and dispatched that same day. Macroom Buffalo Mozzarella has already made a name for itself in gourmet and food circles all over the country. It is available in most of the major supermarkets across the country and in the foodservice sector. The buffalo cheeses are on the menu in many high-quality restaurants in Ireland. Macroom Buffalo cheese have won many awards at the World Cheese Awards, Great Taste Awards and Blas na hEireann awards. Scooping Gold in the World Cheese awards in 2017-2018 for their buffalo mozzarella. The Macroom Buffalo cheese range now includes Ricotta, Greek style cheese and buffalo Halloumi as well as the ever-popular mozzarella.
Mozzarella cheese is a sliceable curd cheese originating in Italy. Our Macroom Buffalo Mozzarella is made from Irish Buffalo milk produced in Kilnamartyra. Mozzarella has a soft, moist texture and a milky flavour. Buffalo mozzarella has a greater fat content than cow’s mozzarella therefore, giving it a rich superior flavour.
Ricotta is a fresh, rich, soft cheese made from the whey of the buffalo’s milk. It has a creamy white appearance with a soft texture and a slightly sweet flavour. It is a very versatile cheese which can be used in sweet or savoury dishes.
Greek Style cheese
Macroom Buffalo also produce a Greek Style Salad cheese. It is a white, brined curd cheese with a slightly grainy texture. Due to the sweet and creaminess of the buffalo milk this crumbly aged cheese has added flavour from your typical Feta cheese. This is a very versatile and popular cheese. It can be used in a variety of dishes including salads.
Our Buffalo Haloumi cheese is a firm, brined, slightly springy white cheese made from Buffalo milk. Frying or grilling it removes all its saltiness and empowers it with a creamy texture.
