Savoury Crepe

Whip up the perfect pancake with this special Love Irish recipe



Ingredients
3 Eggs
250 ml milk
50g Castor Sugar
300 g Odlums Cream flour
50 g butter
100g Mushrooms
50g Ham
50 Grated Cheddar cheese

Step by Step
1.Add the eggs to a large mixing bowl along with your milk and whisk together until smooth
2.Melt the butter over a low heat in a pan.
3.Add the sugar to the milk and eggs mixture.
4.Sift the flour in to the milk and eggs mixture while holding some back
5.Whisk the mixture until smooth. It should be smooth and fall off the spoon evenly. If it is too thick add some extra milk and if it is too thin add more of the flour.
6.Add in the butter to the mixture and whisk until combined and smooth.
7.You can now choose the savory toppings as desired. We used mushrooms, cheese and ham although you can tailor these as you see fit.
8.Fry your mushrooms in a small pan until soft with a little knob of butter.
9.When the mushrooms are soft pour over the crepe mixture and cook over a low temperature until golden brown.
10.Sprinkle the ham and cheese in to the center of the crepe before flipping over using a pan or spatula.
11.Let the crepe cook out over a low heat for a further 2 minutes until cooked through to the center before serving immediately.
