Ingredients
8 Large Jumbo Prawns
1 Bunch Of Asparagus
1 Red Chili
2 Cloves Garlic
2 Tsp Olive Oil
10 Cherry Tomatoes
Step by Step
1.Cut a small incision down the back of the prawn and remove any vein that might be there.
2.Chop the woody end away from the asparagus, approx the bottom third, keeping the spear intact.
3.Chop the woody ends in to small pieces.
4.Finely dice your chili including the seeds (if you don't like it as hot remove the seeds)
5.Peel and finely dice the garlic.
6.Heat your wok to smoking point before adding the oil.
7.Add your garlic and chili and move continuously for 20 seconds
8.Add the prawns and cook for a further 30 seconds.
9.When the prawns start to turn pink in color add the asparagus pieces and the spears
10.Add the cherry tomatoes and cook for a further 30 seconds.
11.Season with salt and pepper and serve immediately
