“The Rebel Chilli”

Story

Started in 2009, Rebel Chilli was set up by Paul and Ken Moore. They both shared a love of spicy food and their passion for hot sauce spurred them on to experiment with recipes at their local farmer’s markets.

With the signature ‘Red Chilli with Lemongrass and Ginger’ a crowd favourite and now award winning product, the Rebel Chilli range would develop the fantastically hot ‘Chillionaire’ and the deliciously sweet ‘Jalapeno and Raspberry Jelly’.

Paul’s passion saw him take over the operation whilst studying for a degree in Business Information Systems at UCC. His enthusiasm for the product and keen eye for marketing added a new energy to the business. After graduating, Paul’s entrepreneurial spirit gave him the self-belief to take the plunge and go full time with Rebel Chilli.

Paul is now delighted to welcome Graham Clarke to the team, founder of Irish brand Kooky Dough after successful sale of the company in 2014. His experience in brand development and food business comes at the right time in Rebel Chilli’s growth.

On his 24th birthday in January 2016, Paul sent his first order for export to Dubai! The range of products will be available in Spinneys from the end of February onwards. This is a new and exciting chapter for the brand and more countries will be added soon! Further success was just around the corner in February, as Paul was shortlisted for the AIB Startup Academy from over 400 entries. After his pitch to the judges, Paul and Rebel Chilli were chosen from the list of 22 companies to be given one of the 10 spots on the Academy. Exciting times ahead!

Our Red Sweet Chilli, which won the Gold award in the Blas Na hEireann Irish Food Awards, is bursting with flavour thanks to the combination of lemongrass and ginger.


Green Sweet Chilli is lighter than Red and has a very unique flavour, particularly good with sandwiches, fish, and salads and is wonderful drizzled over chicken.


Jalapeno and Raspberry is made for adding to cooked meats like burgers, chicken and turkey.


This is our hottest sauce. It is made from 100% habanero and is extremely hot.


This sauce is quite hot with an amazing smoky flavour, it is ideal for marinating chicken or pork. It’s great with scrambled eggs too.
